Ya 'll , I have been making yellow squash casseroles and zucchini bread all last week ! But this savory stuffed zucchini was by far my favorite.
I found a recipe on the web somewhere and never could find it again, so this is what I did .
Stuffed Baked Zucchini
Take 3 med. size squash
Wash and then parboil while till a fork will pierce skin. (Do not peel)
Cool slightly and then split lengthwise.
Take a spoon an scrape out the middle of each half. And save the insides to be used later.
Brown some hamburger meat, small diced onions and green peppers. When browned, pour off fat.
I mixed some chopped maters , grated cheese, cracker crumbs and a couple tablespoons if Duke's. I also added some of the zucchini that I had scraped out
Then I stuffed each one , sprinkled a little bit if cheese on top and sprayed a bit of olive cooking spray in too of each.
Put them in a 350 degree oven till they were hot and bubbly
Yummy!!! And it makes a complete meal.
